Iranian barberry is the most famous raisin in the world that has many fans .

Fresh barberry is not sold much in the market and some cooks use fresh barberry to cook barberry pilaf, which gives the barberry pilaf a better taste due to its freshness and juiciness. This cooking method is not known

Barberry is known and named according to the drying method which is described below:
1. Barberry Puff (in Persian: Pofaki Barberry ) :
To produce a kind of puffed barberry, the branches of the plant are cut with fruit on it and then we place it in a place with a constant flow of air from all four sides. The drying process usually takes 4 to 5 months. After drying, the barberries are separated from the branches by a machine and then passed through a vacuum machine to remove foreign objects. Because this type of barberry is not exposed to the sun, its bright red color and shape is naturally preserved and is the most desirable type of barberry due to its health.
Although the drying time is longer (compared to sun-dried), the advantages of this method are:
1. The color of this type is red and it is different from the dry type of sun which has more crimson red.
2. The shape of the fruit stays bloated and is not compressed.
3. More nutrition is maintained and promotes its health
